What kinds of stats do you track throughout the season? For example do you track wins, losses, pins, pin times, techs, major decisions, reg decisions, etc. Do you carry around a notebook and write this stuff down?
What statistics do you track and what do you use to track this stuff?

Our team managers write down the scoring of every match and I transfer the info to www.matstats.com for our team.

I like to track who got the first take down in a match.

Not a coach anymore, but I only cared about wins, pins, and most team points scored for wrestling awards. Tracking first take down does give a good stat to reinforce the importance of being ready from the opening whistle. Most escapes is the least legit "award" that I think can be given. It's up there with self esteem stickers, ur, I mean participation ribbons!
Have fun!

My Question is...If you are starting with a program that has a small amount of wrestlers what would you do to get started in the right direction?

Promote the team like crazy in the school, and make it sound like a big deal!

If you are starting a new program think about the awards you want to continue for many years...best record at each weight, pins in a season, pins in career, takedowns, etc...and overall record is huge here..we have a century club for those who win 100 matches in a career and I keep all stats. For me first takedown is the one I harp on the most...feel that is the best way to gauge aggressiveness
